Timely for me as well, thanks! I've suspected gluten as the basis of my inflammatory reactions in my body.
I've read that oats may have only a small amount of gluten. I use Quinoa flour to make bread and muffins. Yummy!
Another reason to avoid bread is the bromides contained in it. Bromides supplant iodine in the thyroid, causing all manner of problems. Just like fluoride will.
